The Ultimate Chocolate Brownies


In this recipe I show you how to make the most chocolaty, gooey brownies, perfect for any occasion. They are crispy on the top and incredibly gooey on the inside perfect for any chocolate craving.

Prep time: 15-20 minutes Cook time: 30-35 minutes Serves: 12 
Difficulty: Requires some effort

You will need:
Ingredients:
  • 185g margarine
  • 200g dark chocolate (I used dark chocolate chips)
  • 90g plain flour
  • 40g cocoa powder
  • 3 large eggs
  • 270g caster sugar
Equipment:
  • square tin ( I used a 7.5 x 7.5 inch square tin but a 9 x 9 will work too, use whatever you think will work best even if its a Pyrex dish.)
  • electric whisk (you could do this by hand but it takes some effort)
  • saucepan
  • sieve
  • weighing scales
  • spatula/wooden spoon

Method:

  1. Preheat the oven to 160°C/325°F/Gas Mark 3 and line a tin with greaseproof paper.
  2. Melt the butter in a saucepan over a medium heat. Once it has melted switch off the heat and add the chocolate chips stirring until completely melted. Leave on the side to cool.
  3. Place the eggs and caster sugar into a bowl and whisk until they have doubled in size and lightened in colour, this takes at least 7 minutes so I would recommend an electric whisk.
  4. Once the eggs are fully whisked add in the melted chocolate mixture and gently fold the two of them together until they are slightly incorporated. 
  5. For these brownies we want to sift the flour and cocoa powder twice so we add in as much air as possible. To do this sift the flour and cocoa powder into a separate bowl and then re-sift it into the egg mix. Continue to fold the mixture until all the ingredients are well incorporated. Be careful not to over mix because we want to preserve as much air as possible.
  6. Pour the mixture into the prepared tin and place in the oven for 30-35 minutes.
  7. When baked allow to cool and cut into 12 pieces.
